May is an excellent time to educate yourself about food allergies, which have the potential to be life threatening. Food Allergy Awareness Week is held the second week of May every year. Food allergies affect nearly 15 million Americans and can develop at any point in your life time. As opposed to food intolerances, food allergies are caused by the body’s immune system. The most common allergens in the United States include those to peanuts, tree nuts, milk, egg, wheat, soy, fish and shellfish.  Similarly, Celiac Awareness Month also occurs in May. Celiac disease is commonly misdiagnosed, in fact, it is thought that 3 million people are suffering, while only 10% have been diagnosed. Celiac disease is an autoimmune disease in which the body attacks gluten whenever it is consumed. Those who suffer from celiac disease experience a wide range of symptoms including bloating, gas, itchy rash, diarrhea, constipation, etc. Celiac disease can be controlled by eliminating gluten from your diet. Common sources of gluten include foods containing wheat, rye and barley.
